No injuries were reported, however the staff member was left understandably shaken.
No arrests have been made and enquiries are ongoing.
Detective Constable Russell Clarke, of GMP's Rochdale district, said: "This was a frightening incident and we have been following a number of lines of enquiry as part of this investigation.
"We are now able to release images of a man that we would like to speak to in connection with this robbery. He is wearing distinctive clothing and when considering his large build, we are hopeful that someone is able to identify him so he can assist us with our enquiries"
