This happened on Friday 30 December 2022 at around 8pm on the university campus between Oxford Road and Higher Cambridge Street, just outside the city centre.
The victim, a man in his 20s, suffered hand injuries which were consistent with a bladed article being used.
A second victim, a female in her 30s, was also punched to the face as she tried to calm the situation down.
No arrests have been made in relation to this as of yet.
PC Joe Couchman, of GMP's Longsight district, said: "This is completely unacceptable behaviour and we are following a number of lines of enquiry to try and identify the offenders.
"We are now in a position to see if anyone has any information or witnessed the incident, please contact us as soon as possible."
