Officers are appealing for information following reports of an assault on Liverpool Road, Irlam, on Wednesday 4 October.
At around 11.15am, a man entered the forecourt of a business, before being attacked by another man just a couple of minutes later.
He received hospital treatment for serious life-changing injuries, not believed to be life-threatening.
Officers are now seeking to speak to anyone who may have information or saw something during the morning.
They are particularly keen on anyone who may have dashcam, CCTV, or doorbell footage from around the area in which the incident took place.
Anyone with information is asked to call 101, quoting log number 1166 of 4/10/23.
